Rosie’s Old Fashioned Pork and Apple Casserole
500g Apple Tree Farm pork chops
1 smallish onion (chopped)
2 tbsps cooking oil
1 tbsp flour
2 tbsp brown sugar
2 tsps beef stock powder
1 “Granny Smith” cooking apple
1 tsp salt
½ tsp pepper
2 cups water
1 tbsp vinegar
1 tbsp soy sauce
In a hot frypan, in a little oil, quickly brown each side of the chops to seal-in the juices. Place in the casserole dish. Peel and core the apple and slice over the chops. Fry the onion till lightly browned and add to the casserole dish. In the same pan combine flour, brown sugar and seasonings. Slowly add liquids and beef stock powder – stirring over a low to medium heat until a rich gravy is created. Bring to the boil. Pour the gravy over the chops, apple and onion, cover with a tight-fitting lid and bake for 1 ½ hours at 180°C. Delicious served with creamy mashed potatoes and green beans.
